Four Friends: Chocolate Workshop

4 Friends' chocolate workshop used Belcolade Belgian Chocolate which are made from single origin cocoa beans and we were taught methods that can be used in domestic kitchens. Because of the over sweetness, I don't usually like white chocolate, but with Belcolade, I LOVE their white chocolate because it's not overly sweet and it has a hint of saffron.






Katze told us how to temper chocolate and make ganache infused with different flavours - in our class, she used saffron, celebration tea and rose. My favourite was celebration tea which consists of star anise, jasmin, rosebuds and black tea inside. She taught us that we can infuse whatever flavour we want into a ganache!



Another thing that I learnt during the workshop is laser thermometer which we can buy in Bunnings (never knew Bunning's have such equipment!). They are better than normal thermometer because laser allows us to know the thermometer instantly. Katze also use it to check her adorable children's temperature.



Ganache Recipe - Saffron/Celebration Tea/Rose Oil (Depends on what you use)
250ml Pure/Double Cream
500ml Milk Chocolate (Dark Chocolate if infusing with rose oil)
1 pinch of Saffron
2 tablespoon of tea leaves
2 drops of rose oil
1 tablespoon of rice syrup (Katze is cautious about health)

Put saffron/tea leaves into cream to infuse while heating up until it simmers (for tea leaves, stir and press tea leaves while it's heating up to enhance flavours)

Stir in rice syrup

Pass cream through sieve into heatproof bowl

Stir in chocolate and Rose Oil

If the chocolate did not completely melt, put into microwave for 30 seconds on high then mix, if it's not fully melted, microwave it for another 10 seconds and stir again.

Leave overnight or 4 hours in the fridge to set.
