Oscillate Wildly

I’ve always loved Newtown. There’s just so much variety of food there, from cheap thai to fine dining to gelato. After walking past this humble eatery and talking about making a reservation way too many times, I was over the moon to finally try it out!

G&T infused sugarcane; Pork Skin with
Beetroot Dust & Lettuce with Parmesan
Sucking on sugarcane brings back childhood memories (sans alcohol of course!).  I made sure there were no liquid left in the sugarcane.

These were complementary which we happily nibbled on while waiting for entrees to come. The pork skin was really crispy.

Lobster, Peas, Borage
How beautiful is the presentation. The lobster sashimi was so sweet, I can easily eat endless dishes of them.


Beans, Parsnip, Parmesan
The intense but airy parmesan foam was like consuming a lot of cheese without the calories!

Foie, Cauliflower, Maple
The nitrogen foie had strong flavour which delightfully melts in your mouth. It was balance out with the sweet maple.

Shiitake, Enoki, Cuttlefish
I can confirm that this restaurant is specialised in making concentrated delicious food. The broth was as if I was eating 10 shiitake mushrooms together in one go, along with the tender cuttlefish, it was so so good!

Clams, Celtuce, Coconut
Celtuce, is a combination of celery and lettuce, it was crunchy and refreshing. I didn’t realise that coconut and vegetables goes so well together.

Beef, Wood-Ear, Pepper
Since I’m allergic to beef, the boy had it and said it was cooked well but the portion was small for him.

Murray Cod, Liquorice

They served me cod to meet my dietary requirement. I don’t like liquorice as a candy, but with the fish, it was actually beautiful!  

Blood Orange, Carrot, Cumquat
Gotta love palate cleansers, this was tangy and got me ready for dessert!

Burnt White Chocolate, Miso, Sesame
When the waiter announced that this is white chocolate, my least fav chocolate,  I didn’t have high expectation for this. Thankfully it wasn’t overly sweet and the umami miso surprisingly brought the dish together.

I enjoyed the intimate dining experience with delicately prepared food and impeccable service. The menu they offer is 8 courses for $120 per person and they change every day according to seasonality. Do make sure to book ahead because they do not have many seats!
